Ok! I've already told Y'All what a big hit chicken wings are at my table.
What I was looking for was a standard cooking / smoking roasting process.
Finally I believe I got it.
This is my way:
peanut Oil the wings
rub the wings with BPS Money Rub
Weber 26 OTG with Vortex inside.
1 regular chimney + 1 small chimney with weber briquettes.
1 apple chunck
I fill the vortex with all lit briquettes
Roasting temp reaches immediately 475F at lid gauge (no thermo inside)
Put the wings around the grate in the outer circle.
wait for 50 minutes cooking at 475F.
Remove wings and serve.

super crispy and delicious rub gives a greate taste and All love them.

First and foremost Enrico, your wings (like everything you cook) look amazing!

I like giving my wings a good soaking in Franks Buffalo Wing sauce and then I sprinkle the rub on my wings when I cook them (over fire)
Seems like we nearly do the same thing, and the real difference is the peanut oil vs the Franks. (what? No Olive oil? What kind of Italian are you?) :)
I'm going to try your peanut oil, but over flames in my WSM and report back. I'm hoping for crispy. I do get tons of flavor, but I don't get crispy
News to follow

Congrats on your Wings cook. They look amazing Enrico!

If wingman Clint says it's a go to it's got to be great. The peanut oil can take the high temp good call on that and they look great.

Looks good. The only tip I can add is to try brining the wings for about an hour, then pat the dry with paper towels. Proceed as usual. It plumps them up nicely.
