Charm City Pit Beef

Gene Brownson

TVWBB All-Star
Broke out my rotisserie for my kettle. Haven’t done a pit beef in a while. Within a small area in and just outside Baltimore there are pit beef stands. Just about every community had one that everyone knew the owner and one another. I have been going to the one where I grew up as a young boy.

This is a top round about 3 pounds. Most all stands use the bottom round and most butcher shops commit to their local stand the bottom round which makes them hard to find. The top round is close enough and is cooked the same way. I used BBQ Pit Boys SPG. I let it sit cover with the rub about an hour so while I set up the kettle.
