Center Cut Pork Chops and Sides

Fresh pork chops sounded really good tonight. Had a hectic day today with truck troubles, but managed to swing by our favorite butcher shop down here and pick up some bone in center cuts. Sided them up with grilled sweet potatoes and asparagus.

Prepped the food while the grills heated up.



Gave the potatoes about a 30 minute head start and then put the asparagus over some high heat for a couple of minutes.



Moved the asparagus over to the cool side to finish.



Chops on.

Got these chops same day, same store. Bought 4 of them, will freeze the other two. They had tremendous flavor and my wife said hers was tender and perfect. Mine was on the tough side. Go figure. We're getting addicted to the baked sweet potatoes. Have a great weekend everyone and thanks for looking.

sounds great Cliff - the sweet potatoes sound good right now too.

I'm wondering about your truck troubles too......... I've been considering trading in my 2006 towards a 2017 but I like not having a payment.

That's an awesome but simple dinner and you did great. It's funny because Rich and I are have chops, asparagus and left over potato salad for dinner tonight.
 
Great looking chops Cliff! I used to brine mine for a couple of hours in salt and water but the family said it make them too salty but they were always tender. Did you just use S&P for seasoning on yours? I showed Kim your post. Two thumbs up on the baked sweet potatoes. We've never tried them but we are going to. How long until a sweet potato is done? Great cook!

Hey Robert. Sorry for the delay, been on the road most of yesterday. I bake the sweet potatoes pretty much like a regular russet, depending on size. These guys were pretty large so they were on pretty close to an hour.
