Thanks Clint. I usually use skirt steak or flap meat. I'm experimenting with a couple of different marinades and rubs. What I won't do in the name of research
Thanks Rich. I used the Vortex inverted with the large opening facing up. It definitely generated some great heat. Skirt is ridiculously expensive here as well. The flank really did work out well.
I cooked it direct over the Vortex with the large end facing up and flipped it every 2 minutes for for 10 minutes then moved it to indirect for about 8 minutes.
