Picked up some Ranchera/Carne Asada at my favorite Mexican grocery store. I let it marinate in the fridge for 3 days. Grilled in up on my Genesis Jr. 3 pieces at a time also grilled onions, peppers, tomatoes and tomatillos for making Salsa for my bean dip supreme and street tacos. Oh also made some guacamole. Have nabors over for the feast.Screenshot_20250820_122724_Photos.jpgScreenshot_20250820_122201_Photos.jpgScreenshot_20250820_122041_Photos.jpgScreenshot_20250820_121957_Photos.jpgScreenshot_20250820_122305_Photos.jpgScreenshot_20250820_121651_Photos.jpgScreenshot_20250820_122503_Photos.jpgScreenshot_20250820_120326_Photos.jpgScreenshot_20250820_122448_Photos.jpgScreenshot_20250820_120343_Photos.jpgScreenshot_20250820_120018_Photos.jpg20250821_151111.jpg20250821_151628~2.jpg20250821_154808~2.jpg20250821_155029~2.jpg20250821_171912~2.jpg20250821_172204~2.jpg20250821_172547~2.jpg20250821_173607~2.jpg20250821_162437~2.jpg

Oh man does this look good......I know there is a bit of work involved, I make the same dinner.....except that crazy good looking bean dip you got there.....that looks insanely tasty.......
Also that cut of beef looks really awesome....another cut I believe is not sold where I live, could be called flap maybe but I don't see it anywhere.....marbling is awesome. I have to use flank, skirt or hanger to get similar results....
Being North of the boarder...2 boarders I guess we are limited to Mexican cuisine for the most part....authentic cuisine to be exact. I have 2 places within an hours drive to get the good stuff........while I am fairly certian this is not the case for people like you or Brett for example.
So the flavours are favoured by myself and the MRS.....we try to duplicate a lot of the meals that we can up here.

Thanks Darryl!! My wife and I I enjoy making different types of food together. Making our Salsa from scratch has been a game changer for our Mexican food. We can make it exactly how we like it. Garlicky, Smoky and Hot.. now we're caning it so we can make big batches last longer.
We go back and forth from Washington State to Arizona and our Mexican grocery stores are much different from one place to another. The one in Arizona closer to the Mexican border is much larger with much more authentic varieties. It's kind of like a meat market / grocery store. They even have large rotisserie barbecue going in the parking lot.

Here's some pics of my Arizona Mexican grocery store / meat market.

Here are some pics of our Salsas. We're going to do a canning session this week.Screenshot_20250822_070836_Photos.jpgScreenshot_20250822_070956_Photos.jpgScreenshot_20250822_070853_Photos.jpgScreenshot_20250822_071014_Photos.jpg

Looks like you are ready for football season! Incredible!
Thanks Richard! We like to make it often. I used to make it different. It was carne asada nachos supreme. Which was really good but only for one sitting and after that the chips were soggy and it wasn't the same so I changed it up and went with a dip style which has been much better. Here's some pics of my old nacho style carne asada nachos supreme.Screenshot_20250822_071726_Photos.jpgScreenshot_20250822_071627_Photos.jpg

Yep...that is awesome.
I could really get behind that.
Your verde looks exactly like I made last weekend. I have pics but I am not at home to post them.
All of them look so fresh and tasty.
Not going to lie at all, if I had that access I would cook more Mexican and with any luck up my game on it too.....
Love this post!

Josh, those salsas look amazing. Awesome thread.
Thanks Tim!! I don't have a lot of experience or large variety of things that I cook/Grill but I'm enjoying learning and getting better at it. I'm not at the level that you guys are at but it's fun to post some stuff every once in awhile. It's even more fun to see all the amazing stuff that you guys cook/grill!!

We don't really like to go out to eat so we've learned to get better at making the stuff that we do like.

Honestly, I think that's the best dip I've ever seen. I am unfortunately allergic to avocado 😡

If you don't mind, could you put some aside before adding the avocado? I'm booking a flight right now...

Your skills are amazing!

Btw, I love how that sheet pan fits the grill in that shot. Perfect.

Legit AF! I love ethnic grocery stores. It’s like visiting another country and you score authentic ingredients.
