Caprese Burgers

I can't find it now, but someone posted a Caprese salad the other day that just had me drooling. Tomatoes aren't ripe yet, but I couldn't wait. Kids and wife wanted burgers, so I obliged.

The ingredients. Fresh thyme, rosemary, oregano and basil, and zuke from the garden. Fresh ground chuck and tomato from the grocer. Burgers also got S&P.

Bad lighting. Good burgers. Grill pan heating up for the zuke. The zucchini was diced and marinated in some italian dressing made with a Penzy's spice mix. If you haven't tried their salad dressin mixes, I highly recommend them. We've used the Italian, Green Godess, and country French vinaigrette. All are very good.

Plated up and served with some of my home made lemon berry wine. Burger was topped with tomato and basil and drizzled with EVOO and balsamic.

For dessert, fresh berries and cherries macerated with a touch of sugar and lemon zest. Topped with a mixture of Greek yogurt and honey with a touch of vanilla extract. I chased it with a little bit of lemoncello from the freezer.

While I do enjoy a very wide range of foods, I'm normally a purist when it comes to burgers and like to keep it simple. However, these Caprese burgers are definitely the type of "fancy" burger I can get behind. Outstanding, Jim!
