Is that steak bone in
Yep - that's a bone in T-bone, sometimes called a Porterhouse - both of these cuts have a t-shaped bone. The larger piece of meat on the bone is the strip or loin steak, the smaller piece on the opposite side is the filet. To call it a Porterhouse instead of T-bone, implies that the filet on a steak labelled porterhouse is supposed to be larger than the filet on a T-bone (I would consider the one in Richard's photo a very nicely grilled porterhouse). This is my favorite type of steak to cook because a big one can feed two to 4 people depending on the size of the steak, and how much meat people like to eat. Everyone gets a few pieces of both... The steak around the bone stays really tender... MMM steak
