Thanks Enrico. This is my fifth Brisket and I'm not bragging but I've nailed everyone but it's not luck. Over the years on many websites I've read all the Brisket fails and nightmares. I had always shyed away from it because of that. Last Xmas we were all trying to figure out what the menu would be for our neighborhood party and everyone wanted Brisket instead of Tri Tip. I went out and bought an 18 pounder and read everything I could about doing it right. This was "Do or Die" for me. I started thinking, Who makes the best Brisket? HMMMMM. Aaron Franklin according to a majority of Texans. So I got on Youtube and watched 4 of the best tutorial's imaginable to me. Took a lot of notes and re-watched them 2 or 3 times. I am DEFINTLY no expert on Brisket but these Vid's really helped me. I'll stop rambling now but if anyone is still having trouble with Brisket I recommend watching those four Vid's.
