Brats are from Jacob's Meat Market in Appleton WI

one onion sliced thin on the mandolin then "grilled" in a small cast iron skillet

when both brats and onions were done, i threw them together

...to make room for some bacon from Harry Hansen's Meat Service in Raymond WI

also, done inside, a skillet of sautéed tomatoes, poblano and sweet peppers
tossed everything together and it looked a little like this.

bacon and cheese underneath... peppers, onions and toms on top.
a little bit of broc on the side with more bacon.

i believe Jacob's brats are Wisconsin's Finest...
if you're ever in the Appleton area, stop in for a few dozen or 60. You will not regret it!

i trust you opinion on those brats Jim.

I am a fellow badger, though now stationed in TN. I was raised in the town of Tomahawk and as a punk kid we would often invade the Fox mall in Appleton.

I did my undergrad in Superior WI and they had a local butcher/meat shop called Superior Meats, they made some of the best brats I have ever laid eyes and a tongue on.

I miss cheese curds and good brats. Where we are now, no one knows what a cheese curd is and the only brats are Johnsonville frozen.


Those brats sure make me jealous, waaay to good looking.

The plated shots are killing me as is the shot of the brats with the onions! I just had kabobs an hour ago and you're making me hungry!
 
That's a stunning sammich Jim! Before I read the comments, I thought you had joined the TVWB Bacon Making Club. I guess that means that's some really good bacon.

Man those brats are plump!
Appleton will be on my itinerary next time I'm up your way, after first stopping to visit the P1Gvilion for a fill up!
