Boring Day So Trying To Tame A Monster Brisket

Not much on the docket today. Town is getting full as summer approaches so the beach is too busy! Instead of doing housework figured I'd toss on a brisket. Had an 18.5 pounder in the fridge. She didn't want to fit too well so it's pretty squished up. Here goes.

Wow, that is by far, the largest brisky I've seen on the WSM. I think my largest Brisky was about 14lbs, and that was a good size too. Can't wait to see the final pics!!!! Lookin good so far....
 
So far so good, just got back home, ran out for a quick surf anyways. Temp is plugging along, probably foil in about an hour and take another pic.

I didn't give much thought to halfing it or even seperating the point and flat. If I can squeeze it on I go for it, I prefer the end product when it is cooked whole.

So I could watch You surf while We wait on the brisket to get done!

Clark, it's pretty bad when you ago shopping for a brisket and have to bring a tape measure along

We'd get you out there surfing Bob! The best surfer on any day is the one having the most fun!

You're right Paul I should start measuring, not the first time this has happened. It seems the old catch 22, either I get a massive one because I specify no trimming or else it is a puny flat (which isn't the end of the world but not as much fun!)

Sorry about that guys, had a couple comps the last couple weeks and got a little busy. Anyways here are the pictures! It tasted ok, nothing spectacular, used an apple spice based sauce on it. Nice Beast Larry, now we need the rest of the cuts from it!
