Bone in pork chops osso buco

Bought this rack of pork at Costco and it needed a recipe.

So osso buco bone in pork chops it is.

Ridiculously simple and easy. Will serve this along with some pasta and red wine.

After browning both sides toss in mirepoix

Toasted the flour and cooked the tomato paste to remove its raw flavor. Then added in frozen chicken stock I always have on hand.

Very easy meal to prep. Maybe 30 minutes work up front and then cover and simmer for 2 hours. Then make pasta, rice or potatoes to go with it.

Very high flavor and presentation for low effort. My kind of meal.

Budget 1.5 chops per person. I made 5 so I have 2 leftover which I’ll fork shredded and turn into a rustic meat sauce for the leftovers serving.

Well, she is not home yet, I’m guessing a week at the rehab place, this was pretty big back surgery. So, I will get things ready and have it as close to plating as possible. I don’t plan on going through any of this kind of surgery! Doing my best to keep healthy!
I like the “repurposing” of the extra chops!

Thanks. The bone definitely adds flavor to the sauce. And of course, eating off the bone when done is fun. Maybe it’s why I love rack of lamb too….

You can make this with loin cut too. But the bone is extra level.
