So, my wife asked me to cook some BBQ Bologna. It's something she likes really well. Usually when she asks me to cook it I sort of snarl because I don't think of it as being "real" BBQ. Nevertheless, after I make it I'm always glad I did 'cause its just some good eating. The kids like it as well. It's something that never goes to waste. So I realize its not earth-shattering, but here it is:
Sorry, no action shots. It was a very windy, cold day today and well I just didn't take any
Bologna was slathered with a mustard/soy sauce mixture and rolled in brown sugar prior to cooking. Target temp. was 250-275 degrees for 4 hours. Hickory wood was used for smoke.
Done
Sliced
Charcoal was spent at the end of the 4 hours, so fired up the gasser for a quick sear of each slice
Plated with grilled onion, pickle, and Bush's Grillin' beans. Dijon mustard was on the bun.
An easy prep, easy cook, and some darn good eats!
Tommorrow......A 12 pound turkey!
Thanks 4 looking!
