Bologna "Burger"

So, my wife asked me to cook some BBQ Bologna. It's something she likes really well. Usually when she asks me to cook it I sort of snarl because I don't think of it as being "real" BBQ. Nevertheless, after I make it I'm always glad I did 'cause its just some good eating. The kids like it as well. It's something that never goes to waste. So I realize its not earth-shattering, but here it is:

Sorry, no action shots. It was a very windy, cold day today and well I just didn't take any :(

Bologna was slathered with a mustard/soy sauce mixture and rolled in brown sugar prior to cooking. Target temp. was 250-275 degrees for 4 hours. Hickory wood was used for smoke.

Charcoal was spent at the end of the 4 hours, so fired up the gasser for a quick sear of each slice

Plated with grilled onion, pickle, and Bush's Grillin' beans. Dijon mustard was on the bun.

Thanks 4 looking!

Great looking smoked bologna!! I want to smoke one too but I know I am going to be the only one eating it and even I can stand only so much bologna.

OMG smoked and grilled bologna, best comfort food ever. Just need a side of mac & cheese with it and I'm in heaven.

Looks amazing! I'd try it,but Pammi doesn't do bologna.next time it's just me,I may have to get a nice thick slice and grill it up !

Your pictures look great!! It is best to use a quality bologna for smoking, but it can be expensive. Believe it or not, I did one for our recent deer camp. I got a bologna from the deli and it was more expensive than ham per pound. It is worth spending the extra money for a quality roll though. It is awesome comfort food and it is great for feeding a crowd.

The speedway in South Boston Va sells these on race nights. Bologna burger, usually with sauteed onions and yellow mustard. Love that place! (original home track of ward and jeff Burton).
