Blasted Basted Spares

Didn't plan to post this cook, but what the heck, here it is without a plated pic.
Dug out of the freezer a slab of spares.
Un-enhanced, but "previously frozen" and cost $1.68/lb.
Figured the quality wouldn't be too great and didn't want to waste charcoal and time on the WSM, so I blasted them on the grill with 2 full baskets of Kbb.

Wasn't going to trim them to StL style, but couldn't help myself.
Salt and pepper only.
Indirect for a bit with apple wood.

Then direct and mopped with cider vinegar and apple juice.

The steam was rolling and the smell was great!

Decided they would burn up before getting done, so I later slid the baskets to each side and let 'em ride.

Done in about 3 hours, and they turned out pretty darn good, to my surprise.

It's amazing I'm finding that some of the things we traditionally cook L&S will stand up to HH and be just as good. Maybe the exception is the smoke ring and smoke flavor, which takes some time to happen. Anyways good looking ribs Bob!

Bob, $1.68 a pound? How long were they in the freezer. They sure look good though!

They were in a cryovac pack and the label said "previously frozen"
I had them in my freezer for maybe 2-3 months.
Like I said, they were surprisingly good, and Jo agreed.
Should have taken a sliced shot, they had a decent smoke ring and were very meaty.
