rubbed s& VERY HEAVY p, garlic salt "Hot Shot" from mcCormick is the mixed black and red pepper, and onion powder.
After the sear. Got my kettle to 575*, so was pretty stoked to get a solid sear on it. Cooked for about 45-hour until it read 140*.


Deliciously juicy and flavorful. Shoulda let it rest longer, but this is my lot in grilling world. Beautiful wife and 2 kids ready to eat, kids need baths then bed...15 more minutes is not an option.
