Between a rib and a roast

Took a chance on these bad boys….did an all day wet marinade. Heavy on garlic, lemonade, rum and some Dijon mustard IMG_1333.jpegIMG_1334.jpegUsed some cherry 🍒 and hickory and enjoyed a Breakside IPA and some JJ GreyIMG_1340.jpegIMG_1343.pngHardest part of my day was getting these guys to balance upright! Added a rub!IMG_1341.jpegIMG_1342.jpegPrepped some taters and got them going on the Gold B with a generous amount of olive oil and some salt. IMG_1349.jpegPork finished nicely with a great crunch on the bark!IMG_1345.jpegIMG_1350.jpegAdd a little greens and this was a meal!IMG_1351.jpegSmoke flavor combined with that marinade was a winner.

Looks great, nice and tender and juicy!
I have been reluctant to make that style potato as they seem to me like they could be very dry. Maybe we just make that up with more butter and lots of sour crème?
 
Strong work Richard!! I think that looks surprisingly like what I want for dinner tomorrow!
I’ve not heard of J.J. Grey before, thanks for that as well!
