Turned the controller to 275* with the firepot burning a mix of Cherry, Hickory and Pecan.

90 minutes later I'm liking the color and start the Apple juice spritz every 25 minutes.

3 hours 15 minutes later and after a light glaze, these bad bones are ready for carving!

last time I bought Berkshire spares, there was minimum meat on the damn things... p!ssed me off!

Because I had something in the oven that was timed at 25 minutes to remind me!

Yeah, I've had some of those Berkshire spares that were cut off starving pigs myself!
