Beef Short Ribs

A friend of mine hooked me up with some kalbi marinade last week, so I grabbed a pack of beef short ribs from Sams Club on Saturday.

Everyone in the pool for 24 hours...

On the grill, direct for about 3-4 minutes per side...

And your plate with some asparagus and some black sesame seeds across the top...

Great looking shorts, can't find that style here, would sure like to try them though.
Any good shop or grocery store can cut them for you while you wait.
I like slices to be no thicker than 1/4" and 3/16" is perfect.
Ask your butcher to show you what he is cutting from and look for leanness and a meat band of at least 1-3/4".
You want these from the "big end" of the packer...good shops will stop slicing when then meat band gets thin and make the remainder into conventional ribs.

I almost never settle for what is already cut and wrapped in the case.
I've been getting some massive 2-1/2" wide, lean meat bands from QFC and Safeway has been very good as well.

To get the cut shown in the OP, ask your butcher for "Flanken" cut beef ribs....

Wow - Nice job. I always thought you had to cook those low and slow. I've never had Korean BBQ - where do you get the marinade?
