Beef Short Ribs

Large boned short ribs, some meaty, some not so much.
Salt, pepper, and garlic powder only.

Half a dozen or so lit Rancher charcoal briqs, with peach wood for smoke.
Bottom vents 1/3 open.
After about 2 hrs.

Some small lump pieces were used to keep the heat going at about 250 hood.
After about 3.5 hrs.

Sauced half of them with Bandana's Sweet & Smokey.
About 4 hrs. total cook time.

Served with spears and scalloped potatoes.

I had plain and with sauce, both were very good.
Tender, with just enough chew.

It was Trader Joe's brand, which is actually Rancher, and usually only available during the summer months.
I probably got about 2 hrs. from the briqs.
Put the meat on and closed the lid when the coals were just getting started good.
They were in a Weber char-basket.
 
Oh man that looks good! Nice pullback on those bones. A meal fit for a king! You bet this Swede will go to his butcher and get some BSR
