Beef Short Ribs vs. Chuck Ribs Recommendation?


 
I don't foil or wrap ribs and I've never noticed any sort of significant silverskin below the layer of fat; personally, I think the most important thing to do is make sure the membranes are removed from the back side.

Steven Raichlen is cooking beef ribs on PBS Create right now, but his method involves individual plate ribs.
