Beef Short Ribs on the Kettle

I decided to try some barbecued beef short ribs for the first time. I started with by mixing up a spicy rub and smoked them at 225 F with a little cherry wood on the coals in my Kettle. 6.5 hours later, the ribs turned out perfect.

Those bones look perfect.
You sliced before cooking to get much more bark. Right???
Any influence on cooking time ?

They were already sliced in the package from the grocery. However, I would have sliced them anyway to get more bark.

I do not know how it effected the cook time. This was my first time cooking or even eating beef ribs.
 
Great looking ribs Nate. I have been wanting to try these for a long time. I guess I will have to haul ff and do it after seeing yours...

Sweet smoke ring you got there! My first attempt at them on the WSM was a disaster. Going to have to give it another try after seeing your shots!
