Beef Short Ribs - Mediocre Cook, Good Ending

I made some Beef Short Ribs. They had been frozen and re-frozen, and weren't completely thawed but it was time to do something with them before it was too late. I also jumped the gun using the minion method and should have waited 20-30 more minutes before putting them on. They had a smokier flavor than I wanted, but it was workable. Cooked at 250 for 5 hours with apple and red oak. Mopped every few hours and coated with SBR for the last hour. In the end these were destined to be chopped for sandwiches...some toasted buns, a garden tomato and some good pickles makes everything all right! Got the rest chopped and sauced in a mini slow cooker for dinner tomorrow night.

Looks really good. Beef short ribs are definitely a "done when their done" cook. Too smokey, huh?
