I did some a while back but I got impatient and they weren't rendered enough. They were really marbled. They looked okay but they were still too fatty for me.
I agree. At least in my locale, they are called "flanken" ribs when they are cut into thin strips. At that point they may also be called Korean Beef Ribs.
But I really, really love them the way that the OP did them. He did a beautiful job on what I call "Dino Bones" ! ! !
