Beef ribs

Decided to try my hand at beef ribs on the wsm. I seasoned the ribs with a rub I copied from one of Steven Raichlens books. To go with the ribs I made twice baked potatoes and grilled asparagus.

Ribs going on. I used water in the pan for the first time and I found less temerature swings but more mess.

I cooked the sides on a Genesis II I picked up for $20 bucks from the classifieds.:D

Ribs came off after 3.5 hours.

I cooked the wife a small tri-tip steak as she is not a rib fan.

Ribs turned out well although a touch dry. I think I may like beef ribs more that pork!
 
Jason very nice plate and love those ribs, I have been doing more beef ribs than pork lately
 
Great looking cook Jason, I can't remember the last time I did beef ribs will have to try them again for sure. Love the fireplace shot!
