Beef Ribs, Green Beans & Some Potatoes

Bought several choice beef rib roasts on sale. Saved & froze one for Christmas dinner. Cut the bones off the other & sliced it into 4 steaks. Froze the steaks.

Coated the bones with bacon grease & gave them a heavy dusting of Oakridge BBQ Black Ops. Put them into the 14.5 over K-Lump and 3 big chunks of mesquite.

The probe for the meat was too close to the bone, so I removed it. The cooker held steady at 260* & figured on a 5 hour cook. Checked the ribs at the 3 hour mark.
They probed tender & registered 208*. Panic.... this wasn't supposed to go this way.

Pulled the ribs, wrapped them in foil & put into the oven at 170*. Had a lot of good coals in the 14.5 that I transferred to the JJ.
Cooked some bacon.

Added it to a pan with fresh green beans, water & vinegar.

About 10 minutes later... had to add about 10 lit briquettes to maintain heat.
Chopped up some baby potatoes, coated them with bacon grease & gave them a good sprinkle of K salt & pepper.
Started frying the potatoes when the green beans were about done.

I was a little concerned that the ribs would be over-cooked, however they turned out to be the best ever.
They were moist & tender. Was wishing for more.

I had a similar thing happen last summer. Mine got between 208*-210*. They were mostly ok, though some of the meat was a hair dry. Glad that yours were still good!
 
Really nice cook, Robert. I can never bring myself to cut the bones off my rib roasts.....

Robert - way to wring every bit of goodness out of a meat sale. Nice job on those rib bones!
