Beef back ribs cook tomorrow

I wasn't planning on doing anything this weekend until these caught my eye at harris teeter this afternoon. 1.99/pound and each just over 3.5 pounds. looks like the 1st big bone is gone as each rack only has 6 bones. there are a few shiners but all in all they are probably the best grocery store beef ribs i've seen. i just skined(what a P.I.T.A) and rubbed them down with some woosty sauce and dizzy pig's cowlick and wrapped tight in saran wrap until tomorrow. going to do them at 230 range with RO lump and a few cherry chunks. i may decide to baste them with the thinned out BBQ sauce like in chris a's beef rib how to. i have some KC masterpiece low cal blend(also low carb) that i plan on using. oh, and i also checked that BOTH sides of the ribs fit in the rib rack so i don't have the problem chris did when it's time to invert them

Please keep us posted, Tony!!!

I'll be watching this one with interest. Just picked up some decent looking beef ribs myself from a nearby meat packer. They're frozen, so I have a few weeks to plan.

got the ribs on at 10:15 this morning. the pitminder has been rock steady 225-227 all morning even in the rain. it almost has me changing my mind about upgrading to the digiQ2 when my tax refund goes in the bank.

i took some more pics, but whenever i try to upload them to photobucket it switches me to one of those"you have a virus and need to download blah blah blah". i know from experience not to click ANYTHING on that pop up. i clicked the x in the top right corner once and it took a full harddrive format and reinstall of windows to get my PC right again

Tony C., you might consider the Stoker with StokerLog. Perfect for those cold, rainy overnighters, you can make any temp. adjustments from the warm comfort of you computer.

i considered the stoker, but i already have a fan and mount that will work with the digiQ. and i have heard many horror stories about the stoker folk's shipping and customer service. i rarely ever have to go outside and adjust the pitminder even on cold nights, i just like added features the digiQ has.

Tony,

I think there's something going w/ Photobucket. I was trying to look at some of LarryR's pics a few minutes ago, and got a notification from my Norton saying it was blocking the page because there was someone or something trying to gain access to my computer from there. I'm no techie, but this wasn't a normal cookies sort of thing.

photobucket seems to have taken care of it. i've updated the pics. the 1st pic is the 5 hour mark after just before being basted with the thinned out bbq sauce a 2nd time.

crumbs. I did the best I could to avoid it but I think it infected my computer. every time I click something in google it opens a new tab with a random website.

took right at 7 hours and a 30 minute rest. since photobucket is still iffy, i'll just post the final pics, they are fantastic!!
