I wasn't planning on doing anything this weekend until these caught my eye at harris teeter this afternoon. 1.99/pound and each just over 3.5 pounds. looks like the 1st big bone is gone as each rack only has 6 bones. there are a few shiners but all in all they are probably the best grocery store beef ribs i've seen. i just skined(what a P.I.T.A) and rubbed them down with some woosty sauce and dizzy pig's cowlick and wrapped tight in saran wrap until tomorrow. going to do them at 230 range with RO lump and a few cherry chunks. i may decide to baste them with the thinned out BBQ sauce like in chris a's beef rib how to. i have some KC masterpiece low cal blend(also low carb) that i plan on using. oh, and i also checked that BOTH sides of the ribs fit in the rib rack so i don't have the problem chris did when it's time to invert them
