Splurged for a Snakeriver Prime NY strip for my bday. Reverse seared until 110 and then seared super hot for 45 seconds on each side twice. This came out really good! Carne Costa was the rub and continues to be my go to steak choice.

Plus, opened my Calumut 15 for the bourbon drinkers out there!

Happy Birthday!! That's one beautiful NYS. Pretty much perfect in my book.
My last two reverse sears were cooked on a combination of indirect using a vortex and a sear in the CI skillet that sat above the vortex in the Weber GBS. The sear from CI is so much better, but I feel like I am betraying the grilling process. Need to work on getting the fuel for the sear MUCH hotter.
