BBQ and Kidney Disease


 
My favorite vegetables on the grill are kabobs. Throw your chunky vegetables in a bowl, add olive oil and all your favorite seasonings, skewer on bamboo. For something easy, any "Country Style" frozen vegetables in the Weber stainless basket are excellent. I make a sauce with butter, olive oil, crushed garlic and spices, toss together in a bowl after grilling.

This is a beautiful plate! And I am just mesmerized by the symmetry on this grill. LOL Frame-worthy pics!
 
You can slice cauliflower heads into slabs and grill them like steaks. I cut the florets off and grill them.
I like both of these methods and love pretty much any vegetable cooked on the grill. (Even if you cook them inside foil, they
just taste better! LOL)

But fix one of these cauliflower steaks for your wife. I betcha she will love it - there's just something "fun" about them. :giggle:

I do plenty of veg on my grills. No real "recipes" though. However not to change subject or steal thread. Speaking to the Stage 3 KD. I too was diagnosed with this (thanks to the damage done by Metformin). I did some reading on Mayo Clinic site (IIRC), noting the recommendation of 8 glasses of water a day may be FAR too low for some. Using their methodology I changed my water intake from 8 10oz glasses to 14 minimum. I will admit many days go by and I cannot consume all 14. Some days I am at 16 or even more. Bottom line at my most recent checkup at the endocrinologist I see for diabetes. (He was who noted the metformin was responsible for the damage and got me off of it pronto but he said the damage was done) Anyway on this last checkup he looked at me and said "I don't know how you did it but your kidney functions are now in normal range". I told him about the increase in water intake and he said "keep it up"
Metformin is what did the damage to my wife. I'll pass on that info to her. Whether she will change or not is something I have absolutely no control over. If she digs in her heels a Mack truck isn't going to budge her. :LOL:
 
How long did the metformin take to show the damage?
In my case it happened awfully fast. Like everything other than my glucose was fine (well cholesterol and stuff no) but otherwise no other meds other than blood pressure. But I think it was maybe 12 months or so from beginning metformin to having the dr tell me I was at stage 3 KF

Tom, that's very helpful. I'm definitely incorporating that into the mix and that sauce idea is a keeper.

Thanks Lew. I didn't mention that I heat the sauce in a small pan on the grill or on the stovetop. Just add your favorite herbs and spices and it takes even frozen vegetables to the next level. Also, embellish the frozen veggies with whatever you have fresh .
 
My thanks to everyone for your ideas, thoughts, and well wishes. I posted wanting to learn and not get caught in a pity party and you folks didn't disappoint. I realized that I've been wound up too tight over the last few months and you all ended that. Sara and I have dated for 64 years and, like everyone else, our life has had good times and bad. I am really blessed that we've had this long together. This is just another challenge that we'll handle together.

Yesterday my Weber veggie pan arrived, I hit the supermarket for fresh veggies, and today I gave it a shot. We each had a grilled Brat to go with our experiment. I did Cherry Tomatoes, Green Beans, and Cauliflower florets in the pan. I pinned some Asparagus stalks together and cooked them at 400 on the top grate of my EX6. I smeared them with Olive Oil and Kosher Salt before cooking. Once they were cooked I split them between 2 plates, drizzled the hot Butter and Garlic sauce that Tim posted on one and, knowing she loves Kung Pao Pork, I converted the marinade recipe to a sauce, heated it and drizzled it on the other plate. No surprise - she really liked the Kung Pao veggies but wasn't happy with the Tomatoes or Asparagus. I'm delighted. I have 2 veggies that I know she likes and I can build on that. I cut 2 steaks out of a Cauliflower head and will do them tomorrow. I plan to use Kung Pao and another sauce on them and see what she likes. Thanks again.grilled veggies.jpg

Here's today's taste test. My first Cauliflower steaks and I winged the cook time. I decided to give them 25 minutes at 200 degrees and then crank the heat up to 400 and do them 5 minutes each side. I got lucky and guessed right. The Cauliflower was cooked nicely. I did 2 steaks. One with Kung Pao sauce on it and one with a recipe I found online with Garlic, Paprika, Lemon Juice, Brown Sugar, salt, pepper and Olive oil. Neither had a strong taste and I had to add sauce at the table to really taste the sauces. I won't be doing more steaks but will stick to grilled florets with other veggies. That was the wife's call. Both had a mild taste but I did like the Garlic sauce more. The top one in the picture.8-16-21 Cauliflower Steaks.jpg
