Bavette Steaks on Friday the 13th

There is a new meat market in Durango. Yesterday we went to check it out. It's only open on Friday's. They sell custom cuts of Prime Angus Beef. We picked up a Delmonico, a nice marbled tri-tip & 2 Bavette steaks. The butcher said it is the top cut of a hanger steak. A rich mans hanger steak I would say. Love the marbling. It was pricey @ $14. a lb. But it was great. Here it is:
They also have fresh seafood flown in. Got some fresh shrimp.
Seasoned them up with garlic salt & Savory Pyramid Lemon Pepper & EVOO. And a can of campers corn.

The steaks were seasoned with Tatonka Dust & Montreal Steak.
steaks are almost done, looking guud.
the steaks came out very flavorful & tender. Notice the open grain-ness of this meat. Very nice.
Hope that you all had a nice full moon on Friday the 13th. didn't see any werewolf's. But I did find a new favorite meat. Will be eating more Bavette & Hanger Steaks. will try a hanger next time, can't wait.

Russ, bavette or flank steak is wonderful! Hanger steak looks different. Butcher may be too confused (but it should not happen). I like the image of the moon too.
