Barb's Onion Rings Strike Back (or maybe just "did Barb's onion rings again" :) )

This is my long lost sister, we did the onion rings in the back yard to keep from smelling up the house (double basket deep fryer that hasn't been used for several years)

Burgers, COTC, & buns toasting - I cooked the bacon earlier:

Cheeseburgers-----they cook differently on the charcoal than on my gasser.........much more shrinkage. I'll have to experiment again, I have another # of burger to see.

My mom is leaving the country again in a couple days, she wanted too many pictures so I said why don't I just sit in your lap & you can cradle me (sarcastically).

I failed with onion rings several times before Barb shared her recipe, and everything I've made with the batter has been great.

Great post Clint. Have already copied "Barb's Onion Rings" to my recipe folder to try in a few weeks when I have in laws over and do ribs. Thanks for reminding me about this recipe. Keep up the great cooks and posts.
 
Clint, great family photo, I am sure your mom will love it. I know I got a good laugh.

Food looks terrific also, thanks for sharing and reminding us that onion rings can be cooked outside too!
 
At first I thought your dog wanted to get in on the Mom hug, then I realized he was zeroing in on the burgers. Very nice Clint, both the family photos and your burgers and onion rings.
 
That looks great Clint, your rings are a perfect golden that look like they have a good crunch when you take a bite. Nice family pics also!
 
Oh Great Clint, now I've got to deal with Ms. Swollen Head here all day:rolleyes:. Seriously great pictures and wish your Mom a safe journey.

Clint great pics, love the one of you on your mom's lap that's perfect. Wish her a safe trip from us and glad everyone enjoyed the onion rings. Those with your burgers make a great meal for sure.

I just wanted to mention that these onion rings freeze well, and re-heat the next day just as crispy in the microwave.... We ran out of freezer space & I left 3 individual serving sizes in the fridge - the first one we re-heated on the grill for lunch yesterday & they were as good as fresh, then last night for dinner I microwaved a some & some were soggy...and I have another pack in the fridge....not sure how they'll turn out.

Anyway, freeze what you don't use & they re-heat nicely.

I should also mention to double the batter. That's only enough for one large (not huge) onion. It makes a lot more rings than you'd expect. If there's just 2-3 people make the recipe as called for and only use one onion.
