Barbie's Down South Smoked BBQ Beans


 
The amount of juice, especially from the can, seems scary at first, but if you smoke several hours, it comes out great. I even did a fast cook recently so I drained some of the can juice off first, an they came out too dry. As for the sweet part, I suppose that's a preference. Will be good either way with the onions, amazing how they seem to disappear. Good idea on the bacon, I fry mine first, but add more than the recipe.
 
I made the beans Saturday along with a 14 lb brisket for my step-son's bday party. In the midst of all the kids and commotion, I didn't get any pics. But everything turned out really good. I got several compliments on the beans as well as the brisket. I'll use this as my base bean recipe, and tweak it here and there. Next time, I may try them from scratch instead of using Bush's beans.
