Thanks to the recipe of my new Best Friend Bob Correll I managed to stumble through my first bacon smoke. Followed the recipe to the T.
I also received my new Maverick and it worked like a charm. Stubbs on in a snake form, applewood for the smoke.

On the cure for seven days, on the WSM

Cooked for four hours at 180-190

Hit a stall for a long time at 135, opened the vents and got her up in the 220's for about half an hour to finish

Done, on the ice for awhile and then into the freezer. But not before slicing off a few slices and it was heavenly

That looks fantastic Bill! I always follow Bob's bacon recipe when I make some and I am due
to make another batch shortly.

Bacon looks mouth-watering, Bill. I will have to get my courage & ingredients up to give it a try!
 
Nice looking and great job. Wish I could find bellies that thick around here but only find thinner ones. You will never buy it from the store again :)

Terrific looking bacon Mr Schultz!

No credit due me, others have posted bacon making recipes/methods.
The back story of bacon made easy:
A couple of years ago the Ruhlman bacon recipe was a hot topic, so I had to try it too.
Bought the pink salt, maple sugar, and maple syrup, followed the recipe to a T.
It turned out great, but to my, perhaps under-performing taste buds, did not taste much different than a simple MTQ cure.
