We've made these a couple times, and they're always a hit, although they are labor intensive!
The dipping sauce is 1/2 C Sriracha Hot sauce, 2T Mayo, and 1 tsp lime juice, adjust to your preferred level of heat.
Cut a large onion into 1/2" thick slices and separate into rings. Brush each ring with Sriracha and wrap with bacon, securing with a toothpick, and sprinkle liberally with fresh black pepper.
Grill or smoke at 250-275 until the bacon is cooked, typically about 20 - 25 minutes.
Serve and step away from the platter, or you might get your foot stepped on!
