I have bought a few of these on clearance and forgot about them... I had done a few just as boned chops, but they are smaller than I hoped, so I just went and trimmed it up and made it a boneless rack.. I had never done this, and thought if I wrapped in bacon, it would help keep the moisture in it if I over cooked it... Well I just marinaded it EVOO, Garlic, SnP and Rosemary..

Plated, and it was VERY delish. Tender, Medium Rare and MOIST...
