Ran WSM @ 250 dome - Minion Start, water in pan - Applewood smokewood.
1 I did "Texas Style" with a salt/pepper/cayanne/paprikia rub no foil - 4.5 hrs straight in smoker
1 I did standard "Memphis" style, foiled 3 hours in with brown sugar and butter & slathered in my doctored Blues Hog sauce.
Best rib cook I've ever done. Ribs were comp quality. Perfect bite marks, and the taste was spot on. Kids and wife devoured them! Actually prefered the salt-n-pepper flavor of the Texas style ribs. A nice change of pace. Aaron Franklin would be proud!
Finished product - Memphis on bottom/right, Texas on top/left.
