Asparagus-Lime Pie


 
I make a lot of dips and salsas that I take into work and I use lime quite often in them. One of my co-workers remarked that she liked the taste and asked if I had any recipes that I could share.

Other than Tequila Lime Chicken I didn't have any off the top of my head. So I Googled Lime Recipes and found this one and had to try it.

It uses Asparagus in a dessert mode. I use fresh limes and this stuff

I grilled the Asparagus, then puree it to add the mix. That other stuff is for meatloaf which I will post later.

Egg yolks, sugar, lime zest.

This was the hardest part. A double boiler to temper the mix. Pay no attention to that smoke just a little oil on the burner.

Put it all together and bake at 350 degrees and you end up with this.

It tasted like Key Lime Pie except for the Asparagus.

Looks interesting Bill, but too much work for my lazy a$$ to make it!

just picked up a 2.5 lb. bag of top grade MI spears today, WooHoo!
 
I did not realize that you have been in poor health...our family will keep you in our prayers. You were one of the first to welcome me to this forum. I am not afraid of something new, and I will give this a try!
