All smoker fried chicken- Jamaican Jerk

This was an experiment but it worked great. Halved a chicken and fried it in the smoker. I used the jumbo mini ( Jimmy ) because i can get that thing over 500* even in sub zero temps.

Halved and seasoned with jerk rub and added panko coated with olive oil spray...smoked at 425* with lump and apple.



This was a quick smoke.








I might try 450-475 degrees next but it was crispy and the best bite through to date. Juicy and crispy fried chicken. Next i'll do drum sticks and thighs....yummy! Thanks for looking.

 
Crisp and moist, can't ask for more then that. Will have to try some version of your cook.

Troy the only thing i'm gonna try different is i'm going to spray the olive oil spray on before the panko as well as after. I'll try just chicken parts next time and want the panko to stick on both sides. Might go a tad hotter too just to see what it does.
