Yellow rice, peach smoked pork tenderloins, spinach /fennel sauté (was going to be stuffing but the fence repair project wore this old man out!) Portuguese custard tarts for dessert! Everyone seemed happy!
I was really amazed when I found out EVERY horse in the race was from Secretariat’s bloodline! One wonders how often we will see that?

Thanks everyone, it was a very easy cook really, I’d set some fencing in the morning and was dead tired by the time I started.
The spinach was half a large bulb of fennel sautéed until soft then added two (5 oz.) packs of fresh spinach, and juice of an orange. Yellow rice is from Vigo, simple and always a hit when I don’t want to do it myself. The tying of the tenderloins took more time than anything, it also used the last of my cone of twine! Order placed for replacement. This one lasted from August 26-2022 (my birthday)!

I am not a fan of spinach salad but I like cooked spinach. This sounds good with the fennel and then just gets better and better with your additional comments!
When I was a kid and we had “Popeye brand” canned spinach I literally would gag at the smell of it! I have since learned that that is a common reaction to canned spinach and fresh spinach (cooked) can be a truly lovely side dish! I use it quite a bit nowadays. There is a recipe from Anne Burrell for the most delightful (and dead easy) creamed spinach somewhere out there on the FoodTV channel. Try that one when next you fancy a big steakhouse dinner feast, you will not regret it!😉
