A Seafood Gift

My wife went outside yesterday evening to get something from the car, and ran into our neighbor unloading from a day of fishing.....well, when she walked back into the house, she had two pounds of freshly caught sea bass, which my neighbor cleaned, scaled and filleted in his driveway! :)

I spent a little time on my lunch break today looking for a good recipe that would highlight what I knew would be the wonderful flavor and texture of this fish that was swimming in the Pacific just yesterday. After a quick grill -- about 7 minutes total (I was deathly afraid of over cooking the fish, so I didn't get quite the color I wanted.....):

OMG! This was SO good. The flesh of the fish was firm, meaty, mild and tasty. The flavors of the thyme, basil and garlic were a perfect accompaniment, and elevated the sea bass without overpowering in any sense. This fish paired beautifully with this couscous recipe: http://www.epicurious.com/recipes/food/views/couscous-with-herbs-and-lemon-108354 (don't tell anyone, I substituted quinoa for the couscous, and it was wonderful!)

We were very happy tonight, and there is a small piece left over that will make a nice sandwich, or perhaps a couple of small tacos tomorrow.

Thank goodness for generous neighbors (who are better fishermen than I!!) :)

Thanks for all the comments, folks!

If I could get fresh, wild caught fish like that regularly, I'd probably eat fish for 50% of my meals. As it is, decent fish is tough to find at a price I'm willing to pay, so it tends to be a more occasional item on our dinner table.....I will surely be delivering goodies off the WSM to my neighbor, however, to encourage this type of sharing in the future!! :)

Rich - great job on that sea bass. Nothing better than fresh grilled fish. You have an awesome neighbor too!
