A Question About Brisket

Please see Briskets

"These photos show the same 15.39 pound whole packer brisket... could be cooked in the 18-1/2" WSM by "shoehorning" it between the grate handles and it would shrink during cooking, but a 12 pound brisket would be a more comfortable fit."

Just shoehorn the brisket between the handles on the top cooking grate. For really big briskets, you can put a big chunk of smoke wood underneath to arch the brisket up. I think some have also done this with a smallish bowl.

Did you notice that brisket was $1.89/lb for a total of $29? Those were the days... :)

If I'm doing a brisket that goes the width of the grate, I'll place some aluminum foil on the ends so they don't burn. You can see this in the 2nd picture above.
