We were visiting my daughter, son-in-law, and grand children over Thanksgiving this year. I had encouraged my son-in-law, Ray, to build a Mini-Joe. He already had the Smokey Joe Silver, so it did not take much encouragement. He is an avid griller and he NEEDED a smoker

He had taken delivery of a Vasconia Steamer. We made a run to the local Ace Hardware and Home Depot for the rest of the hardware including a couple of extra grates. It didn't take long to get it assembled and ran the first time empty to burn everything off.
I had previously reported on our first cook. Now, we were doing some Turkey Legs. Ray had found some on sale and picked up four of them. They seemed to be monsters:

Here they are in the brine solution:

Out of the brine and patted dry:

Using a cut out tin can (no top and no bottom) I just dropped a Weber's lighting cube into the bottom and carefully dropped a tin can full of briquets (Kingsford Original). You will note several pieces of cherry wood for smoke. After the coals were lit I carefully removed the tin can with pliers for a perfect "Tin Can Minion" start:

The legs are more than half done:

Finished legs being checked with the Thermoworks instant themometer:

Those big boys on a half sheet tray - they sure fill up space!

Ray is more than happy with his new smoker and I am happy to announce that one more avid smoker has been added to the group.
