A little snack, a little stout...

Got home later than expected so we had some skirt steak tostadas and I had my favorite local stout while I made them!

I tossed a piece of skirt steak into a ziploc with some Deep Beef rub & injection, a few minced chipotles, garlic, and green onion and let it marinate in the fridge overnight.

Meat resting before going on the heat...


Had a few of these treats while I waited...


Pulled it out of the smoker after an hour with an IT of 120°...



Just off the grill... (I forgot to get pics with salsa and sour cream, I was HUNGRY)

Will definitely be trying to make these...looks incredible!!! Skirt steak has quickly become a favorite of mine this past year!!!
