A fitting 50th birthday feast


 
I love the double use of the vortex! Everything looks great, what was the bacon for?
Creamed spinach, I should have done three times as much the grandchildren went nuts over it!
Rendered the bacon, drained off most of the fat, sweated a nice shallot in the fat, deglazed with about a snifter of brandy, dropped about a tablespoon of flour in developed a bit of roux, then in goes maybe 1-1/2 cups of cream and some soft cream cheese, rasped some nutmeg over it let the cream reduce and thicken. Pretty simple really.
Yeah, I had considered firing a second grill but, for once, this was the right way to go, one BLAZING fire, two products!
The gasser did the potatoes and beets.
 
I'd be thrilled with that spread for any birthday, or any day for that matter.
