a big'ol pork steak & peppered flappers

the other day, slow cooked a two-inch pork steak... marinated overnite in Wickers

then seasoned with Tasty Licks...
Cut up a coupla sweet potatoes too...

the taters in the oven while the pork hogged the grill

indirect for the majority of the low heat 3 hour cook...

afterwards, spears of gus were added

then served with a cold light beer...

...wrapped in a Weber can koozie

Dinner was delicious!
last nite, fired up the 18"WSM without the waterpan...

marinated about 16 shé~cone flappers in Stubbs Green Chile...

then turned on channel 4 to view the last of the home team practice games

got the wings on...

turned them every 7 minutes over the intense heat...
found this bottle hiding in the back of the pantry a good friend from Missouri sent me a while ago...

So, I opened it, tasted it & KNEW this would be PERFECT!

actually dipped the wings into the jalapeno sauce...

and set them back over the high heat...

near the end, I removed the mid-section for a final burn

then plated the flaps with fresh garden peppered beans.

The wings were Sticky, Spicy and daggum Tasty too!

So many choices so little time. The pork steak looks like it rendered perfect. Love how the fat veins almost disappeared.
 
Jim you my friend are a cooking fool!! Love it all but I gotta tell ya those wings stole the show!! Great color and I bet they were just as tasty!!

How did you like the Tasty Licks? I have been pondering buying some but my rub supply
is overloading my storage shelves. ;)
