a bad weather day off and cooking a butt

skipped outta work today to smoke butt. mixed some spices together from Kevin Kruger's cookbook.

this rub was applied to the butt thursday night then wrapped up in saran for a cold shoulder overnight.
the butt was then placed on the WSM at 9am today. apple and cherry wood was used for smoke.

'bout four hours later, a few fresh polish were added to the upper deck.

kept tellin' her those, too, will take a while, butt Maddie waits patiently.

the kielbasa was on for approximately 90 minutes at 250ºF.

the pork was removed from the WSM after an internal temp of 198ºF was reached,
I also used the <span class="ev_code_GREEN">thermapen</span> that went in like a hotpoker in snow.
Foiled, coolered, then pulled after two hours rest.

served on wheat rolls with shredded cheddar and mozzarella with asiago cheeses beneath and creamy slaw on top.
peppered whachacallit beans also on the side.

my buddy Bob told me this morning, "a bad weather day off and cooking a butt is better than any day at work"
boy0boy is he right!

Beautiful cook Jim! I also like the extra racks, so where can a person find these extra ones? I have only seen them on a few cookers here, but not in any store.
 
Quality! Those PP-buns looks Great! But i wouldent mind downing a few of those polish ones first. 2 thumbs up
 
I've had a busy week myself and would love a day off. Looks like your day was well spent. Love the PP -- not something you do all that often. Am I right?

Well Jim I haven't commented on any of your cooks lately because quite frankly I ran out of things to say about your fantastic, grand, marvelous, terrific, tremendous, wonderful, wondrous, amazing, awe-inspiring, delectable, delicious, luscious, scrumptious, toothsome and yummy looking cooks.

Jim, I use Kevin's rub for Jane every time I cook butts, and I love it!
Gary, I cook butts more often than you may think, about 8 a year...
and I always have pulled pork in vacuum sealed bags on hand.
Yes Bob, I do have leftover pork, my neighbors Jon & Michelle benefit from my butt cooks every time and they love it too!
