Do I thaw and smoke all the pork shoulders I have in my freezer before buying more?

Yeah, No.

I'm heading over tomorrow. Hopefully they have more by then.

The sale just started. It didn’t look like clearance but rather a value buy. You should be good for tomorrow pickup.
 
All the product was below and in front of this sign. I picked up a $45 bag, minus $8. I’ll package mine up this week for a cook or two and the freezer. Pretty good deal for a versatile cut of meat.
Every picture tells a story, don't it? :) I thought it was one of those "sign of the times" kind of photo.

There is a stack of them here up north.
I had to grab one just because.
I think I now have 4 butts in the freezer.
I’m dying to know if they are any good.

I did see some marinated meat products today but since I don’t buy pre marinated I didn’t pay close enough attention to what it was. It appeared to be an in-store marinated /rubbed product.

I’ll check again if I get back this week which is likely. My office needs Coke Zero.
 
Yes, the good deal does add a certain amount of improved taste! I have become more circumspect of previously marinated products too Brett. Almost always too salty! The prefab “arrecherra” is the pretty much the only commercially done stuff I buy.
I keep one in the freezer for a quick fajita fix when I have NO drive!

You like their marinated skirt steak? A Hispanic friend of our family said they keep the freezer packed with them. So I bought a few when they were on sale, packed them all away in the big freezer and made one that night. haven't touched one since. I just found the flavor terribly "off putting". Not by salt. Just something so "chemical" in the taste and the aroma of it cooking. We tossed it in the trash and I will be clearing the freezer of the rest
 
Actually, I was turned on to them by my late uncle (lived to 99 years old) who was staying with his late wife’s Latino family in San Diego, he said they were available everywhere out there and had become a constant bit of Fiesta fare! I do like them, much to my surprise, to tell the truth.

for any mexican beef, you can do a quick 30 minute marinade and pretty much always have a cleaner tasting homemade product.

beef of your choosing cut into 1/2" thick pieces with each piece only a few inches long, say 5-8" in length
splash of soy sauce
granulated garlic
granulated onion
black pepper
red pepper flakes
ground cumin
rubbed/crushed oregano
either: pineapple juice, frozen orange juice concentrate or pineapple-orange concentrate
splash of AVC ACV or a squeeze of fresh lime
neutral oil (helps avoid sticking to a pan or grill)

marinate for 30 minutes and sear to rare or medium rare.

makes perfect fajitas (add peppers and onions), cut into small chunks for tacos, or chopped with a knife for even better tacos (serve with diced white onion and fresh cilantro and a cold beer).

i have never been happy with store bought pre-marinated meats. i am also sus of most food stores as they use lower quality ingredients to boost their margins and they already overprice marinated meat products. just my $.02 worth. it's healthier and less expensive to just make it at home.

DWV - distilled white vinegar
ACV - apple cider vinegar
RWV - red wine vinegar

come to think of it, i keep and have in my pantry: balsamic glaze, balsamic vinegar from Modena (the OG), DWV, ACV, RWV pretty much at all times. and i use them often.

I've yet try anything commercially marinated and cryovac'd,(is that even a word), that wasn't overly salty or off-putting and refuse to buy it....
