Had friends over on the 3rd. Brined a halved chicken for 36 hours with salt, peppercorns, bay leaves and Old Bay as part of the salt. I forgot brown sugar which i usually use, but it turned out great. When I pulled the chicken it looked red and "hammy". I was a little worried, but it was delicious.
Did about 8 baked potatoes with my "big boy" helping me season them up. Check out that concentration!
Put them under grate to make room for chicken on the other side and did a bloomin onion above potatoes. No pic.
Did one half in garlic powder, onion powder and black pepper. The other half in homemade Magic Redfish and Kickin' Chicken.
No action shot of chicken on grill, but this is some of it as I broke it down, and a great pic of a big juicy breast piece. Wish I had taken more pics of it all laid out, but everyone knows how it is when you've got hungry guests. Everything turned out delicious!
Went to 4th of July picnic at friend's house. They had ordered pulled pork, chicken, and brisket from http://mission-bbq.com/ They went to pick up at 8:30 the night before, and Mission BBQ didnt have it ready for a few different reasons.One of them being that this is one of their busiest days of the year. The manager apologized and asked them to come back at 10pm...after their closing time! They knocked on the door, and the owner came out of the kitchen with all of this...
He gave this all to them for FREE!!! Apologized for not having their order ready, and this was all on him. Talk about customer service. What this man didn't know is that he was giving this food to a Marine who had completed multiple tours in Bagdhad and was celebrating the 4th with his family. Pretty cool stuff, and knew everyone here should hear about this.
