40+ Cloves Garlic and a Chicken

my version anyway.I used chicken leg quarters, they were on sale $0.48/lb. I split the leg and thighs apart and cut of the back bones

Thighs getting a quick sear and half of the garlic cloves warming up in some olive oil in a CI skillet


Seared the legs, added some Knox's Yummy Chicken Seasoning, added the other half of the garlic and let it go for about a hour and a half.

Cut up a French Baguette and toasted them on the grill


Plated. I made a sauce for the pasta using some of the olive oil from the skillet I cooked the chicken in, smashed some of the roasted garlic, and added some Parmesan cheese. Turned out really well.


Also made a pot of collard greens with some store bought turkey necks.
 
I like this recipe and been wanting to this for a while... Nice job John.

Huge fan of this dish...Only made it once. Dident look this good though. Its bumped up to the next 10 cooks list. Outstanding John!

Great looking cook and post, have you ever considered using more garlic?

Honestly, yes. The garlic comes out so mellow and sweet when roasted. All of the garlic was gone last night. There was three of us for dinner last night and we ate it all.
 
My body doesn't burn garlic very well, my sweetheart won't let me get garlic on our pizza anymore...I get a little gassy
