I had a 3 pack of spares from Sam's club. Trimmed them St louis style and halved them to fit in zip loc bags.
Just S&P and 24 hrs @ 150 for the Joule. Gave the pacs a 2 hr shock in ice water and held them in the fridge until dinner. 40 mins on the WSM with one chunk of Hickory.
Made some # 5 and added the purge liquid.
Also some homemade M&C with imitation crab meat. Keri C's Corn and black bean salad paired really well with this.
The rib's were tender juicy with a slight tug. I was really impressed as this was my first time.

They look pretty good. I've done SV beef ribs for 72 hrs, then on the grill for smoke for an hour or two, then sauce. They came out great. I'll have to try some spares soon.
I would definitely do them again. My Wife requested no rub just S&P but next time I'll add some rub to half of them. Once SV'd and ice bathed you could hold them in the fridge for a few hrs or days and then on the grill for a bit.
It's been hot and humid lately so the less time outside is a big plus.
